Applebee's Grilled Shrimp 'N Spinach Salad


Applebee's Grilled Shrimp 'N Spinach SaladIngredients
Bacon Vinaigrette:
½cup lt olive oil
¼cup minced cooked bacon (3-4 slices)
¼cup red wine vinegar
½ts cornstarch
¼cup sugar
1½ts Dijon
¼ts salt
¼ts pepper
¼ts liquid smoke
Shrimp Seasoning:
1ts pepper
½ts salt
½ts garlic powder
¼ts onion powder
¼ts paprika
¼ts sage
¼ts sugar
20-24med shrimp, peeled and deveined
2T butter, melted
¼cup sliced almonds
16cups fresh spinach
½cup diced tomato
½cup sliced red onion
¼sliced roasted red bell pepper

Directions

1.Make bacon vinaigrette by combining bacon w/ 1/4 cup of oil in sm saucepan over med heat. Boil for 1 min. Remove from heat and let cool 3-4 min. Dissolve cornstarch in the vinegar and whisk the mixture into the oil and bacon, along w/ the sugar, mustard, salt, pepper, and liquid smoke. Drizzle the remaining 1/4 cup of oil into the pan while whisking. Cover and chill dressing. 2. Preheat grill. Combine shrimp seas ingre in a sm bowl. Mix this blend w/ your fingers to break up any clumps of sage. 3. Pierce 6 shrimp on each skewer. Brush the shrimp w/ melted butter and sprinkle a little of the blend on both sides. Grill skeweredshrimp for a couple min on each side, or until they are done. 4. Toast the sliced almonds in a med saute pan over med heat until golden brown.Toss the almonds often so they don't burn. 5. Build each salad by tossing 8 cups of spinach w/ 1/4 cup diced tomato, 1/4 cup red onion, 2 T bell pepper, 2 T almonds and 3-4 T vinaigrette. Toss gently so that you don't bruise the spinach. Arrange the tossed salad on a serving plate, then remove the grilled shrimp from the skewers and place 10-12 shrimp on top. Makes 2 large salads

Sweet Tooth Salad

Can I offer you a salad?  No, the blog hasn’t been hacked, there actually is a salad on here, but I think it’s a salad that even those with a strong sweet tooth will love, which is why I call it my Sweet Tooth Salad.   This is my all time favorite salad.  I actually shared an earlier version of this salad over three years ago here on the blog.   While I was making myself one this week, I figured this gem of a salad could make another appearance here on the site.

Let’s be honest, I’m usually not the person who goes out to dinner and orders a salad.  I’m just not that girl.   Every now and then a salad will catch my eye, but for the most part, I want a nice hot meal that someone else made for me.  And shopped for.  And did the dishes for.  And cleaned up after.    But back to salad.  I had a salad similar to this many years ago at a wedding, and I absolutely fell in love with it.  It’s a great combo of so many flavors, with sweet and tart notes, crunchy bites, chewy bites, it’s got a lot going on.

I’m not a big recipe follower with things like salads.  I don’t measure, I eyeball everything and what goes into my salad can be very dependent on what I’ve got in my fridge, and more often than not, what I did or did not forget at the store.   When the stars align, this salad is made up of the following items…   Baby spinach, dried cranberries, pomegranate seeds, sliced apples, feta cheese, candied pecans, grilled chicken and a drizzle of poppy seed dressing.

So. Darn. Good.  If I’m serving this as a side, then I usually leave out chicken.  If I want it as a main dish or complete meal, then chicken please!   While this is my absolute favorite combo for this salad, I do mix it up.  Feta can be swapped for blue cheese.  Candied pecans (the amazing things that they are) can be swapped for regular pecans or walnuts.   Apple or pear, whatever is on hand.  And if one of the items is missing, that’s okay as well.  Sometimes I skip the dressing all together.  As always I’m all about flexibility and working with what you have.

I am not very scientific in my measuring with salads, and think that making them to taste and working with what you have and what you like (or do not like) is a great way to go.   Here is a recipe outline for this salad…

    Ingredient amounts are based on what you like or need, use as little or as much of ingredients as you like.
  • Baby spinach or other greens
  • Sliced apples or pears
  • Pomegranate seeds
  • Dried cranberries
  • Nuts such as candied pecans, regular pecans or walnuts
  • Feta or blue cheese
  • Sliced grilled chicken
  • Dressing such as poppy seed or even a raspberry vinaigrette
Instructions
Combine ingredients in the amounts that you enjoy and serve!

Simple Apple Walnut Salad

Apple Walnut Salad
Every fall I get the itch to start cooking (and baking of course) with apple and pumpkin… which doesn’t make much since seeing as it’s still about 90 degrees out. I’m just willing fall to come faster!
This is one of our favorite salads—so simple and we always have the ingredients on hand. Enjoy!
Ingredients (makes 2 large plate salads or 4 side salads):
  • Spinach (1/2 bag)
  • Romaine lettuce, chopped (1/2 head)
  • 1/2 c. feta cheese (gorgonzola works great too)
  • 2 apples thinly sliced
  • 1 c. candied walnuts (tutorial here)
  • Poppy seed dressing, to taste
Mix lettuces first, then add apples, chilled walnuts, and feta. Dress when ready to eat. This salad is great leftover too so only dress what you’re going to eat at that meal! We love this as a main salad or as a side.

wrapWould it be a cliché to say “yum” on a cooking website? If so, I’m in big,big trouble.
And furthermore: Yum.
I made this deliciously simple salad after church yesterday, and since I was ravenously ravenous, I decided to introduce some carbs into the picture and make the salad into a wrap. It was so utterly delightful, especially after the ridonkulously hot weekend of soccer, soccer, and soccer. With a little soccer thrown in. It was fresh, crunchy, with a nice combination of protein and fruit and greens…oh, and goat cheese.
Oh, and a few other things, too.
Here’s how I made it!

Grilled Chicken & Strawberry WrapThrow a couple of chicken breasts into a ziploc bag and use a rolling pin to pound the thicker areas of the chicken until they’re a uniform thickness.



Grilled Chicken & Strawberry WrapThen, either whip up your favorite balsamic vinaigrette yourself…or grab a dang bottle of Paul Newman’s (or whatever kind of vinaigrette you like) out of your pantry. Because sometimes life is too short to make your own vinaigrette.
Now that’s deep, Ree.

Grilled Chicken & Strawberry WrapThen seal the bag, squeeze out the air so the dressing is totally coating the chicken, and marinate it in the fridge for an hour or two.
You can use any vinaigrette you want: Raspberry vinaigrette would be lovely!



Grilled Chicken & Strawberry WrapAfter it’s marinated, cook the chicken on a grill pan (or outside on the grill if you haven’t been at soccer games all weekend).



Grilled Chicken & Strawberry WrapA couple of minutes into cooking, rotate the chicken 45 degrees so it’ll have pretty, fancy grill marks.

Grilled Chicken & Strawberry WrapThen, when then chicken’s totally done in the middle, remove it to a board…

And here’s why I like quartering the strawberries: If I were to simply slice them, each slice wouldn’t wind up with much surface area. This way, you see some of the beautiful strawberry skin with each piece of strawberry.
That’s my story and I’m stickin’ to it.

Grilled Chicken & Strawberry WrapOr you can make wraps! Start with a flour tortilla. I used whole wheat.

Grilled Chicken & Strawberry WrapYou may have to “style” it a little and make sure you have even amounts of strawberries and chicken throughout.

Grilled Chicken & Strawberry WrapRoll up the wrap as tightly as you can. You can also roll it like a burrito, where you tuck in the sides, but I like the purty stuff to be visible on both ends.

Grilled Chicken & Strawberry Salad Wrap

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1/2 cup Bottled Balsamic Vinaigrette
  • 1 whole Package (12 Ounces) Mixed Salad Greens
  • 12 whole Medium Strawberries, Hulled And Quartered
  • 4 whole Green Onions Sliced (white And Light Green Parts)
  • 1/4 cup Pecans, Chopped
  • 4 ounces, weight Goat Cheese Crumbled
  • 6 whole Large Whole Wheat Tortillas

Preparation Instructions

Place the chicken breasts in a large plastic storage bag. Seal the bag, leaving a small opening, then use a rolling pin to pound the breasts until they're a uniform thickness. Pour in half the balsamic vinaigrette, then seal the bag and marinate in the fridge for 1 hour.
After the chicken has marinated, grill it until it's done in the middle, about 5 minutes per side. Remove from the heat and set aside to cool slightly. Dice up the chicken when it's cool enough to handle.
Add the salad greens to a large bowl. Add half of the remaining dressing and toss it to coat the greens. Add more if it needs it. Add the strawberries, chicken, green onions, and pecans. Toss it gently a few times until it's all combined. Top with crumbled goat cheese and toss a couple of times.
Place an equal amount of salad down the middle of each tortilla. Roll up, then slice in half.
Serve wraps with chips and extra strawberries.
