Let’s talk memories. I have always been able to remember things pretty well. It rages all the way from retaining weird information like random people’s birthdays to important things like which recipes I’ll be sharing here. I have list upon list in my head and should definitely focus on writing things down more frequently. Yeah, I’ll get on that.
Anyhoo, no matter what you’re able to retain, one thing most people tend to store really well are memories related to food. It goes without saying that this form of memory doesn’t require much practice or much of anything really. They’re basically built in, which means they must be suuuper important. Even though I feel slightly overwhelmed from time to time and am embarrassed to admit how much of my current thoughts and recollections are consumed by food, I wouldn’t have it any other way.
It brought about these fabulous cookies after all.

It definitely was love at first bite. I had these cookies for the first time at my friend, Aimee’s house.
She whipped up a batch of these just in time as we started to settle in to watch one of our favorite shows. It was probably The Biggest Loser or something. ‘Cause that what you do, isn’t it? Eating ice cream or another treat while watching the contestants working out and monitoring their food intake. It’s the mental support that counts, ya’ll.

That was about 2 years ago. It’s the only time I had them and a couple of days ago my taste buds and memories started to crave said cookie. It’s for the blog I told myself. And yes, it definitely was. Well, partially. I just had to share them with you because I just like each and every one of you too much to not do so, true story. But I can’t deny that it brought a huge smile to my face as well. It was a good day. And since today is Friday, which is already a great thing in and of itself, I am convinced that making these cookies would set it over the top. Just sayin’.

The recipe comes from a lady named Karla. It was passed on to my friend when she got married to her husband Eric. We don’t know who Karla is, but she sure knows how to make a super chewy and scrumptious cookie. Thanks, Karla!

These cookies are perfect for cleaning out your cupboards and getting rid of those small amounts of chocolate chips that you may have leftover from making your last batch of cookies. If you don’t have something on hand like m&m’s or mini chocolate chips or even peanut butter, feel free to adjust with whatever you do have on hand. A combination of different kinds of chocolate chips or even almond butter would work beautifully. You really can’t go wrong.

I really wish we had some of these leftover. But hey, I may just go ahead and make another batch today. As should you. It’ll be one of the best things you do today!

Hope you all have a lovely weekend! I’ll get to watch my hubby ref his first Basketball game and after that, we’ll be rooting on our local Hokey team. Looking forward to a sports-filled Saturday and relaxing Sunday!

Chewy Monster Cookies combine everything you could possibly want in a cookie - chocolate, peanut butter, oatmeal and m&m's... simply perfect.

Ingredients
  1. 1 cup granulated sugar
  2. 1 cup brown sugar
  3. 1/2 cup butter, softened
  4. 12 ounces creamy peanut butter
  5. 3 eggs
  6. 1 teaspoon vanilla
  7. 3 1/2 cups oatmeal
  8. 2 teaspoons baking soda
  9. 1 cup flour
  10. 1 cup mini chocolate chips
  11. 3/4 cup m&m's
Instructions
  1. Line a baking sheet with parchment paper and preheat oven to 350 degrees F.
  2. 1. Cream together granulated sugar, brown sugar, butter and peanut butter. Mix until well combined and then add one egg at-a-time to the mixture until all eggs are thoroughly incorporated. Add vanilla and give it a good stir.
  3. 2. With the mixer running on low speed, add oatmeal, baking soda and flour until dough forms. Remove bowl from mixer and using a rubber spatula incorporate chocolate chips and m&m's.
  4. 3. Place dough on prepared baking sheet with the help of a cookie scoop or about 1 1/2 to 2 tablespoons of dough per cookie. Place in the oven and bake until lightly browned, about 7-9 minutes. Enjoy with a cold glass of milk.
Notes
  1. Chewy Monster Cookies will keep up to 1 week in your cookie jar or up to 6 weeks in an airtight container in the freezer.
