Deborah Ann's Super Salsa

Ingredients: 

60 medium tomatoes
7 onions
4-5 jalapeno peppers
2 cans tomato paste (if you want it thickened up a little)
1/2 cup salt
2 cups vinegar
1/2 tablespoons cumin
1 tablespoon oregano
1 cup sugar
1 glove minced garlic


Directions: 


  1. Peel tomatos and then chop them
  2. Chop onions & peppers
  3. Add salt, vinegar, cumin, oregano, sugar, and garlic. 
  4. Cook 2-1/2 - 3 hours on low heat until it thickens.
  5. Adjust seasonings to taste
  6. Put in pint jars and process in a hot boiling water bath 20-25 minutes
