1 tbsp. melted butter
1/2 medium chopped onion
1/4 c. melted butter
1/4 c. flour
2 c. half&half cream
2 c. chicken broth
1/2 pound of broccoli
1 c. shredded carrots
1/4 tbsp. nutmeg
8 oz. sharp cheddar cheese
salt and pepper
Instructions:
- Saute onion in butter and set aside
- Cook melted butter and flour using whisk over medium heat for 3-5 minutes stirring constantly
- And half&half
- Add chicken broth
- Simmer for 20 minutes
- Add broccoli, carrots, and onions
- Cook over low heat for 20-25 minutes, stirring often
- Add cheese, stir in nutmeg
