Broccoli Cheddar Soup

Ingredients: 

1 tbsp. melted butter
1/2 medium chopped onion
1/4 c. melted butter
1/4 c. flour
2 c. half&half cream
2 c. chicken broth
1/2 pound of broccoli
1 c. shredded carrots
1/4 tbsp. nutmeg
8 oz. sharp cheddar cheese
salt and pepper

Instructions: 

  1. Saute onion in butter and set aside
  2. Cook melted butter and flour using whisk over medium heat for 3-5 minutes stirring constantly
  3. And half&half
  4. Add chicken broth
  5. Simmer for 20 minutes
  6. Add broccoli, carrots, and onions
  7. Cook over low heat for 20-25 minutes, stirring often
  8. Add cheese, stir in nutmeg
