6 boneless skinless chicken breasts
18 fresh sage or basil leaves
1 large onion thinly sliced
1/2 cup grated cheddar or mozzarella cheese
12 slices of prosciutto
Salt & pepper to taste
Olive oil
Directions:
- Make a small pocket inside of each chicken breast
- Stuff with 2 thin onion slice, 3 fresh basil/sage leaves, 2 tbsp. grated cheese, salt & pepper
- Wrap each chicken breast in 1-2 thin slices of prosciutto
- Place chicken breasts in a baking dish and brush with olive oil
- Salt and pepper again and sprinkle with cheese
- Bake at 400 degrees for 30 minutes; let rest for 5 minutes before serving
