Mom's Chicken Enchiladas


Ingredients: 

1/2 cup of miracle whip dressing
1/2 cup of flour
3 cups of milk
1 (8 ounce) package of cheddar cheese
1 1/2 pounds of chicken
1 cup of salsa
16 tortillas
1/4 cup parsley (optional - but my favorite part)

Instructions: 

Pre-cook chicken by boiling it
Mix miracle whip and flour on the stove at medium heat
Preheat oven to 375 degrees
Stir in milk
Bring flour/milk mixture to a boil
Add the cheese
Reserve 1 cup of this sauce
Stir in chicken, salsa, & parsley
Fill each tortilla with 1/2 cup of this mixture
Roll into burritos and line them into a 9x13 casserole dish (it's okay if they're squished tightly
Spread the 1 cup of sauce that you saved earlier on top of the enchiladas, followed by cheese (optional)
Bake for 25 minutes
