1/2 cup zesty italian dressing
2 tbsp. butter
3 pounds chicken
1/2 c. orange juice
1/4 c. chicken broth
1 large orange (thinly sliced)
1 egg
1/4 c. sour cream
Instructions:
- Heat dressing and butter in large skillet on medium heat
- Add chicken
- Cook until golden brown
- Add orange juice, chicken broth and orange slices
- Bring to a boil
- Reduce heat to low and cover
- Simmer for 40 minutes or until chicken is cooked thoroughly
- Remove chicken
- Beat egg and sour cream in a small bowl until well blended
- Remove 1 tbsp. of juices from skillet and add to mixture
- Cook for 1-2 minutes or until slightly thickened - stirring occasionally
- Serve over chicken
Note - Turn chicken with spatula when cooking, a fork pokes holes, preventing the chicken from absorbing the juices
